There is nothing more delicious than the typical and characteristic desserts of the Colombian Caribbean. Its mixtures of flavors and ingredients perfectly fuse the culinary traditions of the region. Today I come to share with you an iconic and highly desired recipe: enyucado… in its healthiest version of course! Without oil. Sugarfree. But with its same essence. Sweeten your palate with the light version of this unique dish from the coast of Colombia.
Ingredients:
- 4 moderate-sized yuccas
- Half coconut
- Salt to taste
- Stevia or honey to taste
- 2 tbsp anise
Instructions:
*Preheat the oven to 350º 10 minutes before.
- Peel and grate the yuccas and coconut.
- Mix and knead all the ingredients listed.
- Transfer the mixture to a refractory.
- Bake for 40 to 50 minutes.
- Remove the mold from the oven and divide the dessert into squares. Wait for it to cool before unmolding it.
And that's it, it's that simple! You just need to enjoy the exquisite and pleasant flavor of this incredible dessert. A delicious and healthy sweet to offer at any type of gathering or to share at home after a family lunch.
Tip: If you have leftover pieces, I recommend storing them in the refrigerator so that they remain in good condition for longer, and heating them in a double boiler when you want to eat them.
