HEALTHY OATMEAL COOKIES

You can't imagine how much we all like desserts in my house. My husband, my daughters and I love to eat something sweet after lunch. That's why I always have healthy recipes in the fridge like this one I have for you today. It is extremely easy to make and very nutritious and children love it.
First part:
For the banana jam you will need the following ingredients
- A banana
- Cinnamon to taste
- Stevia to taste or a little 100% natural honey.
In a pot with water, boil the banana with the cinnamon, stevia or honey. Sometimes I like to add both because honey makes it more melty. Let rest. You can put it in the refrigerator and use it as jam for pancakes or toast.
Second part:
The rest of the ingredients in the recipe are
- Oatmeal to your liking
- Chia seeds to your liking
- a pinch of salt
- Almond or peanut butter, personally I like almond butter better
Preheat the oven to 250 degrees. In a large bowl add the oats with the chia seeds, a pinch of salt and stir, I don't leave quantities because I really taste and mix to my liking.
Then you add the almond or peanut butter and the previously prepared banana jam, saving a little of the latter because we will need it in the end. You mix it with your hands until it becomes a paste, it cannot be hard, its texture has to be like plasticine.
Once you have the mixture ready, you transfer it to a flat container that can be put in the oven, I like to put the mixture all together as it appears in the photo, I add it to the container and spread it with my fingers, leaving it flat. You can also make it separately and make shapes with the cookies.
When we have all the mixture on the tray we are going to spread what we saved of banana jam on top.
Now ready to put it in the oven for 25 to 30 minutes at 300 degrees, I also leave this part to your liking, personally I like it crunchy and hard so I leave it longer.
These cookies are delicious with afternoon coffee, an AM PM snack, or simply as a dessert.
