NICKY'S ULTIMATE SUGAR & GLUTEN FREE BREAD RECIPE | OAT BREAD
It's time to replace that commercial bread with a homemade, delicious and nutritious option. Here I present the perfect recipe to obtain oat bread, without sugar, without lactose and without refined flour, it is a delight without regrets! I promise you that it looks, smells, and tastes exquisite.
Ingredients:
1. Oatmeal - 225 gr
2. Vegetable oil - 80 ml
3. Salt – 2.5 ml
4. Stevia – 15 ml
5. Chia seeds – 15 ml
6. baking powder – 5 ml
7. eggs - 2
8. Granulated yeast – 20 ml
9. Rolled oats - 60ml
10. Warm water – 237 ml
Instructions:
• Mix granulated yeast and warm water; let it sit for 5-10 minutes.
• In a large bowl, add and mix all the dry ingredients.
• In another container, mix the vegetable oil, stevia and yeast water.
• Transfer all the wet ingredients to the dry ingredients bowl and add the 2 eggs.
• Beat the entire mixture with a large spoon.
• Once everything is incorporated and the mixture becomes sticky, remove it from the bowl and start kneading everything with your hands and a little oat flour.
• Keep kneading until the dough no longer sticks to your hands.
• Dirt the container with the oat flour and put the already kneaded dough back in.
• Cover the container with aluminum foil and a dark cloth. Let it sit for 1 hour to 1 and a half hours.
• Preheat oven to 350 degrees for 10 minutes.
• During those 10 minutes, knead the dough again to soften it and give it the shape you want.
• Bake the bread at the same temperature for 10 to 15 minutes.
And voila! I find this crusty on the outside and soft on the inside bread amazing with a little butter and jam, sliced avocado or even with chickpea tahini for a toast full of protein and fiber.
