Hello hello! Today I come to share with you my homemade recipe to prepare the traditional KOLA pens or popsicles. This recipe is ideal to forget about the heat and will leave you drooling because they are a DELIGHT. They have an unmatched flavor and their creaminess is from another world. In addition, we are going to use natural and nutritious ingredients, so that they are as healthy as possible. My daughters keep asking me to make them more, and neither does my husband, so it's a perfect dessert for the whole family! Keep reading to find out how to make this recipe step by step.
1. In a pot, bring the almond milk to a boil and stir. The almond milk has to be homemade, this is the key so that the pens are creamy and not watery.
2. Continue stirring with a wooden or silicone spoon until the almond milk thickens and reduces to 50%. You can't stop stirring if we want to reach that thick consistency that we love so much.
3. Add liquid stevia to taste and a pinch of salt, while continuing to stir.
4. At this point add the nutmeg, this will give it an extra sweet or "Christmas" flavor as I describe it.
5. Add half a can of coconut cream and continue stirring.
6. When the coconut cream is well mixed, we can add the most powerful ingredient: the essence of KOLA without sugar. This is to taste, depending on how strong you want the flavor. I added 2 tablespoons.
7. Let it cool.
8. Add the other half of coconut cream that was left and blend everything.
9. Transfer the preparation to the ice cream bags or mold and put it in the freezer.
