COCONUT COOKIES

HELLO HELLO!!

These cookies have been my salvation this forty, they take away my craving for sweets, plus the crunchy flavor that I love, plus the chocolate flavor that I sometimes crave so much hahaha.

If you don't know, feeling the taste of chocolate causes the brain to produce endorphins that give the body a feeling of well-being, stimulating joy and happiness. Things that help us feel a little better in these moments of uncertainty, due to the situation we are experiencing in this quarantine due to COVID 19.

First of all, we preheat the oven to 250 degrees.

You will need:

  • 1 cup grated natural coconut
  • 1 cup almond or oat flour
  • Stevia or honey to taste
  • One egg white
  • Half a cup of unsweetened chocolate, use it at 70% crushed
  • Half a cup of rolled oats
  • Salt
  • A tablespoon of almond or peanut butter (optional)
  • 1 teaspoon baking powder

In a bowl, mix the almond or oat flour, with the grated coconut, the flaked oats with a pinch of salt and the baking powder.

In another bowl, mix the egg white with the stevia or honey, and the almond butter or butter of your choice.

Combine the two mixtures in a single bowl and stir until the mixture is completely incorporated. Now we can add the chocolate pieces and stir again.

We now have the mixture ready to start making balls with our hands, and we are putting them in a flat container. If you want, you can put kitchen paper in the container, or you can add a little ghee butter or coconut oil to the container so that they do not they stick to you.

We put them in the oven at 350 degrees for about 25 to 30 minutes.
